Lime-Cilantro Sauce

Ingredients

Equipment needed: high power blender or food processor

  • ~2 c. cilantro microgreens (one 1.5 ounce market bag)
  • ½ c. cashews (or sub an avocado for nut-free version)
  • 2 cloves garlic (optional)
  • 1 Tbsp. cooking oil
  • ½ - 1 Tbsp. maple syrup or other sweetener
  • 1 lime
  • 2-4 Tbsp. water
  • Salt and pepper, to taste

Directions

  1. Boil water and pour over cashews to cover. Allow to soak and soften 5-10 minutes.
  2. Chop garlic, then add one tablespoon cooking oil to a pan and sautée garlic over medium heat ~2 minutes, or until softened.
  3. Squeeze the juice from the lime and drain cashews. Add cilantro, drained cashews, maple syrup, sautéed garlic, a couple grinds of pepper, a pinch of salt, 2 Tbsp. lime juice and 2 Tbsp. water to blender or food processor.
  4. Blend mixture until smooth, adding more water if needed to get the blender going.
  5. Adjust flavors, adding more lime, sweetener, or salt and pepper, to taste.
  6. Store in a jar, keeping leftovers in the fridge. Enjoy for up to 5 days.
  7. Add a punch of flavor to your favorite dishes. Dollop on tacos, beans and rice, Indian food, potatoes and more!

*Vegan, Gluten-Free: Substitute avocado for cashews for nut-free version.
