Ingredients
Equipment needed: high power blender or food processor
- ~2 c. cilantro microgreens (one 1.5 ounce market bag)
- ½ c. cashews (or sub an avocado for nut-free version)
- 2 cloves garlic (optional)
- 1 Tbsp. cooking oil
- ½ - 1 Tbsp. maple syrup or other sweetener
- 1 lime
- 2-4 Tbsp. water
- Salt and pepper, to taste
Directions
- Boil water and pour over cashews to cover. Allow to soak and soften 5-10 minutes.
- Chop garlic, then add one tablespoon cooking oil to a pan and sautée garlic over medium heat ~2 minutes, or until softened.
- Squeeze the juice from the lime and drain cashews. Add cilantro, drained cashews, maple syrup, sautéed garlic, a couple grinds of pepper, a pinch of salt, 2 Tbsp. lime juice and 2 Tbsp. water to blender or food processor.
- Blend mixture until smooth, adding more water if needed to get the blender going.
- Adjust flavors, adding more lime, sweetener, or salt and pepper, to taste.
- Store in a jar, keeping leftovers in the fridge. Enjoy for up to 5 days.
- Add a punch of flavor to your favorite dishes. Dollop on tacos, beans and rice, Indian food, potatoes and more!
